Recipe: Drømmekage
 - (Danish Dream Cake)


I går var det international pandekage dag, og af da grund fik jeg selvfølgelig pandekager. Første gang hos en veninde efter skole, og anden gang med mine værtsforældre efter aftensmaden. Super lækkert, og mange af jer ved sikkert allerede hvordan man laver en pandekagedej.
Udover at spise pandekager, fik jeg også bagt drømmekage (igen). Denne gang var det til min tutor, da det er min fødselsdag denne uge. Derfor skulle jeg bringe en kage ind til skole. Kagen var en stor success, så tænkte at jeg ville dele opskriften.
Opskriften passer til 1 portion kage, så jeg lavede en dobbelt portion for en hel klasse, hvilket passede fint. Vær dog opmærksom på at mål og tider kan variere, når opskriften er skaleret. Jeg brugte self-raising flour i stedet for normalt mel og bagepulver, og vanilje ekstrakt i stedet for vanilje sukker.
Drømmekage

Ingredienser for 1 kage.
Kage
4 æg
300 g sukker
250 g hvedemel
3 tsk. bagepulver
1 tsk. vaniljesukker eller vanilje ekstrakt
2 dl mælk
50 g smør
Fyld
100 g smør
150 g kokosmel
225 g brun farin
½ dl mælk
 
Fremgangsmåde
Pisk æg og sukker lyst og luftigt. Bland mel, bagepulver og vaniljesukker sammen. Vend det forsigtigt i dejen drysset gennem en sigte. Varm mælk og smør (lillefingervarmt) og vend det forsigtigt i dejen. Hæld dejen i en lille bradepande beklædt med bagepapir (ca. 5 x 22 x 30 cm) og bag kagen midt i ovnen i ca. 20 min. ved 200 grader celsius.
Mens kagen er i ovnen kan du begynde på fyldet. Kom smør, kokosmel, farin og mælk i en tykbundet gryde og bring det i kog under omrøring. Tag kagen ud (den skal være næsten færdigbagt) og skru op for ovnen. Fordel fyldet på kagen og bag den færdig, stadig midt i ovnen i ca. 5 min. ved 225 grader celsius.

// Yesterday it was international Pancake Day, and because of that I of course had pancakes. First I had it at a friend’s house after school, and then I also had it with my host family after we had dinner. It was really good, and I am sure that most of you know how to make pancake batter.
Besides eating pancakes, I also baked a Danish dream cake (again). This time is was for my tutor, since it is my birthday later this week. Therefore I had to bring cake to school. The cake seemed to be a great success, that’s why I thought to share the recipe with you.
The recipe is for 1 cake. I made a double portion for one school class, which was an appropriate amount. Be aware of measurements and times can fluctuate, if the recipe is changed.


This Danish Dream Cake is like a sweet dream indeed. The cake itself is soft and spongy and absolutely delicious with the thick and coconut flavoured topping. 
Danish Dream Cake

Ingredients for 1 cake.
Cake
4 eggs
300 g sugar
250 g plain flour
3 tsp. baking powder (or use self-raising flour instead of plain flour)
1 tsp. of vanilla sugar or vanilla extract
2 dl milk
50 g butter
Topping
100 g butter
150 g shredded coconut
225 g brown sugar
½ dl milk
 
Instructions
With a hand mixer lightly whisk the eggs and the sugar. Gently sift the self-rising flour into the mixture, and fold it with the vanilla extract. Heat milk and butter in the microwave for about ½-1 minute, and carefully pour it into the batter. Pour the batter into a little prepared pan with baking paper (about 5 x 22 x 30 cm), and bake for about 20 minutes at 200 degrees Celsius.
While the cake is baking, prepare the topping. Add butter, shredded coconut, brown sugar and milk to a saucepan. Melt while stirring occasionally, and bring it to a boil. Take the cake out of the oven (it nearly has to be done), and turn the oven temperature up to 225 degrees Celsius. Pour the filling on the top of the cake and smooth it out a little. Place the cake back into the middle of the oven for another 5 minutes.
